German Chocolate Cheesecake

Ingredients

Crust:
1 package German chocolate cake mix
1/2 cup shredded coconut
1/3 cup butter or margarine, softened
1 egg

Filling:
16 ounces cream cheese
2 eggs
3/4 cup sugar
2 teaspoons vanilla extract
------------------------------
Topping:
2 cups sour cream
1 teaspoon vanilla extract
1/4 cup sugar

Directions:

Crust:
Mix crust ingredients until crumbly. Press into ungreased 9x13-inch pan.

Filling:
Beat filling ingredients together until smooth and fluffy. Spread over Crust. Bake at 350° for 25 - 30 minutes. Cool.

Topping:
Combine Topping ingredients and spread over cooled Filling. Refrigerate for several hours before serving.


Fun Fact: Northwest Colorado Springs is home to the Garden of the Gods, a 1,365-acre park where fantastic sandstone formations jut out from the surrounding hills. Entrance to the park is free according to the wish of Charles Elliott Perkins, whose children donated the land to the city in 1909.
