Turkey Salad with Chipotle Mayonnaise |

There are so many wonderful dishes to make with Mexico's large native bird. Here is a contemporary turkey salad to serve as a light meal or as part of a buffet.
3 cups Basic Cooked Turkey Breast
1/2 cup Chipotle Mayonnaise or Crema
1 large avocado (Hass variety preferred), peeled and diced
1/2 medium cucumber, peeled, seeded and thinly sliced
1 cup diced jicama
2 tablespoons chopped fresh cilantro
1 teaspoon fresh lime juice
3 ripe medium tomatoes cut into wedges
2 1/2 cups shredded lettuce, such as iceberg or romaine
1. Prepare the turkey breast, then put it in a large bowl. Prepare the mayonnaise.
2. Mix the remaining salad ingredients, except the tomatoes and lettuce, with the turkey. Add the dressing and toss to coat. Arrange a layer of shredded lettuce on a serving platter. Mound the salad on the lettuce and surround with tomato wedges.
