A Mexican meal might be considered incomplete without raw and cold cooked vegetables preceding or garnishing the main course. Traditional dishes served as first courses, such as seafood cocktails, marinated cold fish, fruit salads, hearts of palm salads, Cactus Salad (see Salads), and avocado and tomato salads, are among the traditional salad-type dishes that have been eaten for centuries.
With the advent of nueva cocina (the new cuisine), which really took off in the 1990s, the salads and starters picture is changing, led by chefs serving creative new dishes that incorporate native and typical Mexican ingredients, including composed vegetable salads and special main-dish salads of meats or fish with vegetables. It's a popular enough trend that Mexican cooking magazines also feature photos and recipes for contemporary salads, and home cooks are following their creative lead.
Although there has long been a concern about the safety of the water in Mexico, and, as a result, an unwillingness of many people to eat uncooked produce, many Mexican cooks and chefs have made efforts to use treated water to clean raw vegetables and fruits. Slowly, the sight, aroma, and taste of these delicious salads, and the safety assurances, are winning people over. (If you visit Mexico, however, it does still pay to be cautious, especially in rural areas.)
Very often, some vegetables for salads are cooked first, then marinated and served cold, making salads that are flavorful--and safe.
In the United States, we can include all kinds of wonderful salads and inventive first courses when planning a Mexican meal. This chapter offers plenty of choices, whether you want to be traditional or try something from the emerging new style of Mexican cooking.
