South-of-the-Border-Meals from North-of-the-Border Kitchens
There are many opportunities to incorporate Mexican dishes into your daily meals. A simple salsa and toasted tortilla chips, or a flavorful Mexican soup or side dish can liven up just about any everyday meal, but many people also like to plan a complete Mexican menu and entertain around a Mexican theme. It's one of the most festive ways to bring a party atmosphere to the table, indoors or out.
The twelve menus that follow are designed to fit a certain kind of gathering and time of the day. I hope the menus will inspire you to use the recipes in this book and give you ideas for creating your own menus for everyday meals or when entertaining. You can mix and match from menu to menu or select an item or two and build a menu around them as you thumb through the many possibilities in each chapter of the book. Prepare the number of dishes you feel comfortable with and don't try to make too many things for any single event. Buen Provecho!
