Cake flour has a lower protein content than all-purpose flour, so it makes cakes that are more tender. Be careful when purchasing cake flour, because there are two kinds: plain and self-rising. I only use the plain cake flour, because self-rising contains salt and baking powder, and I prefer to add my own.
