Mantua Cake

Ingredients

1 cup (2 sticks) unsalted butter, at room temperature
1 cup sugar
1/2 teaspoon salt
1 large egg
2 teaspoons grated lemon zest
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1/2 cup fine yellow cornmeal
1 1/2 cups almonds, finely chopped
confectioners' sugar

Directions:

1 Place a rack in the center of the oven. Preheat the oven to 350°F. Grease a 12 × 1-inch round pizza pan or a large baking sheet.

2 In a large bowl, beat the butter with the sugar and salt until light and fluffy. Beat in the egg, lemon zest, and vanilla. Stir in the flour, cornmeal, and nuts just until blended.

3 Scatter the dough in the prepared pan. Pat the dough out into a 12-inch circle. Bake for 30 minutes or until the center feels firm when touched and the cake is golden brown.

4 Cool 5 minutes in the pan on a wire rack. Slide a metal spatula under the cake and transfer it to a rack to cool completely

5 Sprinkle with confectioner's sugar before serving. Store covered with foil at room temperature up to 3 days.
