Ingredients

2 pounds whole or part-skim ricotta cheese, drained if necessary

1 1/2 cups confectioners' sugar
1/2 cup unsweetened baking cocoa powder
1 teaspoon pure vanilla extract

Directions:

In an electric mixer or food processor, combine the ricotta, sugar, cocoa, and vanilla. Mix until smooth and well blended.
