One recipe of Basic Egg Pasta dough
1/4 cup butter
1-2 tablespoons flour
1 cup heavy cream
1 dash grated nutmeg
Salt and white pepper to taste
1/4 cup freshly grated Parmesan cheese
1 cup cooked, cubed chicken
3/4 cup grated mozzarella cheese
Melt butter in a large skillet. Whisk in flour. Add cream. Simmer over medium heat about 2 minutes until slightly thickened. Add a pinch of salt to taste, a few grindings of pepper, and a tiny grating of whole nutmeg. Add 1/4 cup Parmesan cheese. Simmer till sauce thickens. If sauce is too thin, add more Parmesan cheese. Add chicken. Spread on top of pizza dough. Top with mozzarella. Bake at 400 for 10 - 15 minutes.
