3 cups stale bread cut into small chunks
2 cups milk
3 eggs
1/3 cup butter (room temperature)
1/2 cup chopped onions
1 1/2 tablespoons fresh chopped parsley
1 cup dry Italian bread crumbs
Salt and pepper
Pinch nutmeg
Freshly grated parmesan cheese

Soak stale bread in milk. Beat together the eggs and butter then add onions and parsley. Squeeze out the bread and put it through a potato ricer or a sieve then add the egg mixture and breadcrumbs. Season it with salt, pepper and nutmeg. Set aside for a few minutes. Shape the mixture into small dumplings, and boil them in a good amount of salted water. Serve with melted butter and grated Parmesan cheese.
