1 turkey, about 10 pounds, giblets and wing tips removed
salt and ground black pepper to taste
12 cloves garlic, sliced
1/3 cup fresh sage leaves (about 3 grams), coarsely chopped
1/2 cup extra-virgin olive oil

Wash the turkey, pat dry, and season inside and out with salt and pepper. Place the turkey in a 6- or 8-quart slow-cooker, and scatter the garlic and sage over and around it. Pour the oil over the top, cover, and cook on low for 6 to 8 hours, until a thermometer inserted in a thick part of the thigh registers 165°F. Cut into pieces before serving.
