Slow food simmers and spits lazily on a back burner while we play. It rests in a slow cooker while we rest in the next room. It steams gently over a fragrant broth while we run errands, finish up work, or just relax. And the best part is that while were occupied elsewhere, ingredients are being transformed in ways that no quick-cooking kitchen gadget could duplicate. Flavors are blending, blossoming, and balancing in ways that no amount of expertise could master. Sometimes the best thing a cook can do is sit back and take it easy.
The proliferation of slow-cookers and slow-cooker recipes has helped many home cooks realize that convenience is not always a question of speed. Though I use a slow cooker frequently, I recognize that it has its limits, and I encourage you to embrace the other tools you have in your kitchen (a low oven or a simmering burner come to mind) that can help you make delicious food with a minimum of effort.
