Ingredients

1 turkey, about 12 pounds, washed inside and out and dried
2 tablespoons kosher salt
1 teaspoon coarsely ground black pepper
2 teaspoons dried poultry seasoning

Directions:

Heat the oven to 450°F. Season the turkey inside and out with the salt, pepper, and poultry seasoning. Place on a rack in a roasting pan. Roast for 45 minutes. Reduce the oven temperature to 170°F and roast for at least 12 hours more. (Longer will not cause overcooking.) There is no need to let the turkey rest before carving.
