Stir-Fried Stroganoff

Serves: 4

1 pound beef stir-fry strips
salt and ground black pepper to taste
2 tablespoons vegetable oil
2 cups sliced mushrooms (about 6 ounces)
1 (10-ounce) package refrigerated or frozen green bell pepper strips
1/2 teaspoon dried thyme
1 (12-ounce) jar beef gravy
1/4 cup sour cream, regular or light
rice or noodles for serving (optional)


Season the beef with salt and pepper. Heat the oil in a large wok over high heat add the beef and stir-fry until browned. Add the mushrooms and stir-fry for 30 seconds. Add the bell peppers, thyme, gravy, and salt and pepper heat to boiling and cook for 1 to 2 minutes. Stir in the sour cream. Serve with rice or noodles, if desired.
