Ham Steaks With Chile Pesto


Serves: 4

Ingredients

oil for brushing the grill rack
1 lime, cut in half
2 tablespoons Basil Pesto, homemade or jarred
2 tablespoons Chinese chili paste, with garlic
1 tablespoon orange marmalade
1 pound ham steak, 1/4-inch thick (about 2 stakes)

Directions:

Heat a grill to high or a ridged griddle over high heat. Brush with oil. Meanwhile, squeeze the juice from half of the lime and combine with the pesto, chili paste, and marmalade brush on both sides of the ham steaks.

Sear the ham on both sides on the heated grill, about 1 minute per side. Cut into serving-size portions. Cut the other lime half in half and serve with the ham.
