Steaks With Tomato Olive Butter


Serves: 4

Ingredients

2 tablespoons butter, salted or unsalted, softened
2 tablespoons Tapenade, homemade or jarred
1 teaspoon tomato paste
1 1/2 pounds beef sirloin steaks, rib steak, T-bone, or porterhouse
kosher salt and coarsely ground black pepper to taste

Directions:

Heat a grill to high or a ridged griddle over high heat. Stir together the butter, tapenade, and tomato paste in a bowl. Divide the mixture into 4 portions and chill. Season the steaks with salt and pepper, and grill to the desired doneness, about 4 minutes per side for medium-rare. Top each serving of steak with a portion of the flavored butter.
