Steamed Sole With Sea Salt And Chives

Serves: 4

1 tablespoon extra-virgin olive oil
4 sole filets, about 4 ounces each, and 1/4 inch thick
1/2 teaspoon coarse sea salt
1/4 teaspoon ground black pepper
8 fresh chives, cut into 1-inch lengths
1/2 lemon, juiced


Coat a large dinner plate with half of the olive oil. Arrange the fish in a single layer season with the salt and pepper, and scatter the chives over the top. Cover with plastic wrap or another plate inverted over the top. Steam in the microwave just until the fish is cooked through, 2 to 3 minutes. Remove the cover and sprinkle with the remaining olive oil and the lemon juice. Serve immediately.
