Shrimp Nachos Grandes

Serves: 4

1 (9-ounce) bag yellow or white corn tortilla chip
1 (8-ounce) container hummus
12 ounces cleaned and cooked shrimp, medium or large, thawed if frozen
3/4 cup crumbled feta cheese (about 3 ounces)
1 1/2 cups chunky salsa, any heat level
1 pouch (about 1 cup) refrigerated guacamole (about 1 cup)


Place half of the chips on a large, microwave-safe platter. Top with half of the hummus in spoonfuls, half of the shrimp, and half of the feta (try to arrange the ingredients evenly so that there is some of each in each bite). Repeat with the remaining chips, hummus, shrimp, and cheese. Cook in a microwave at full power until heated through, about 2 minutes. Spoon the salsa over the top, and serve the guacamole on the side.
