Spanish Rice

Serves: 8

2 tablespoons oil
1 large onion, chopped
1/2 medium bell pepper, chopped
2 cups long grain rice
1 (16-ounce) can tomato
3 cups water
1 teaspoon vinegar
salt and pepper, to taste


Sauté onion and bell pepper in oil until tender. Add rice and fry until lightly brown, stirring occasionally. Add tomatoes and fry a little longer. Add water, vinegar, salt and pepper, and cover. Let cook over low fire until fluffy, stirring occasionally.

Variation: Add 2 tablespoons capers in liquid.
