Sausage-Rice Casserole

Ingredients

1 pound hot pork sausage
1/4 teaspoon pepper
1 cup chopped celery
1 cup chopped green pepper
1 cup chopped onion
2 (11-ounce) cans chicken and rice soup
1 soup can water
1 (8-ounce) can mushrooms and liquid
1 1/4 cups uncooked rice

Directions:

Cook sausage until crumbly. Add pepper and chopped celery, green pepper, and onion. Cover and steam until tender. Add remaining ingredients and bake in a large casserole dish for 45–60 minutes at 350°. Stir once while baking so top will not dry out. Makes 8 large portions.

Even Easier: Use a bag of frozen sauté vegetables (chopped onion, celery, and green pepper) for a hastier fix.
