Rice with Raisins and Pine Nuts

Serves: 4

2 tablespoons butter, divided
3 tablespoons chopped green onions
1/2 teaspoon finely minced garlic
1 cup rice
1/2 cup golden raisins
1 1/2 cups chicken broth
1/4 cup pine nuts


Melt one tablespoon butter in saucepan and add onion and garlic. Cook, stirring until soft. Add the rice and stir. Add raisins and chicken broth and bring to boil. Cover and let simmer exactly 17 minutes. Stir to fluff rice while blending in the pine nuts and remaining butter.
