LeaRaye’s Mushroom Rice

Serves: 7
Total Calories: 316


2 cups uncooked rice
4 cups chicken or beef broth
1 stick butter
1/2 cup chopped green onions
1 clove garlic, minced
1 pound mushrooms, sliced


Cook rice in broth. While rice is cooking, sauté green onions and garlic in butter in a large skillet until tender. Add mushrooms and continue to cook until mushrooms are tender. Add mushroom mixture to warm rice and mix well. Cover and let stand 10–15 minutes to let flavor develop before serving.
