Layered Banana Pudding

Ingredients

2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups milk, scalded
3 egg yolk, slightly beaten
2 tablespoons butter
1/2 teaspoon vanilla
2 - 3 ripe bananas, sliced
1 (11-ounce) box vanilla wafers
1/2 cup heavy cream, whipped
vanilla wafer crumbs

Directions:

Mix sugar, cornstarch, and salt together in top of double boiler. Gradually add milk to sugar mixture. Stir constantly over boiling water for 10 minutes, or until mixture thickens and forms a pudding. Remove from heat. Stir small amount of pudding into egg yolks. Stir egg yolk mixture into remaining pudding. Cook, stirring constantly, for an additional 5 minutes. Remove from heat. Stir in butter and vanilla. Cool. Fold in bananas.

Line bottom and sides of serving dish with vanilla wafers. Pour in pudding. Chill. Garnish with whipped cream and a sprinkle of crumbs.
