Cook rice. Beat eggs; add sugar, nutmeg, salt, milk, and cooked rice. Pour into 2-quart baking dish in which 1 stick butter has been melted. Bake at 400° about 30 minutes. Do not overcook. Center should be a little shaky.
Grandmother Romberger's Lemon Sauce:
Mix cornstarch with water. In saucepan, mix sugar, salt, lemon juice, butter, and egg. Add cornstarch mixture. Stir and cook slowly until thick. Add coloring if desired. Makes 1 cup. Pour over pudding.
