Aunt Clara's Peach Ice Cream

Ingredients

2 cups fresh peeled, sliced peaches
1 1/2 - 3 cups sugar to taste, divided
3 whole eggs
2 teaspoons vanilla
1 quart milk (including 1 large can evaporated milk)
2 cups whipping cream, whipped

Directions:

Purée the peaches or mash well with a fork. Let stand an hour or two with sugar to sweeten. Mix eggs, some sugar, vanilla, and milk. Fold in whipped cream and peaches and freeze in ice cream freezer.

When freezing, remember to fill the barrel about 1/3 full of ice, and then pour in a layer of ice cream salt. Pour more ice, then more salt. Keep the freezer full of ice, but be careful that no salty water gets into the freezing container. When you have turned until hard, remove dasher and pack tightly with ice and salt to ripen and harden. Or you can remove container to your own freezer. Serve when hard.
