Honey-Glazed Pineapple Carrots

Ingredients

3 cups cut, peeled carrots
1/2 cup water
1/2 cup brown sugar
2 tablespoons butter
1 tablespoon honey
1/3 cup crushed pineapple
1 chopped chives or parsley for garnish

Directions:

Cut the carrots into 2-inch strips. In a microwave-safe dish, combine the carrots and water. Microwave covered on HIGH for 4-6 minutes, until carrots are tender.

Add brown sugar, butter, honey, and pineapple. Mix well and microwave covered for an additional 2 minutes. Sprinkle with chopped chives or parsley as garnish.
