Fried Cauliflower with Cheese Sauce

Ingredients

1 large head cauliflower
1 (12-ounce) can beer, at room temperature
1 1/4 cups all-purpose flour
vegetable oil for deep-frying

Cheese Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 1/2 cups shredded Cheddar cheese

Directions:

Wash cauliflower; cut into small florets. Cook, covered, in a small amount of water in saucepan for 8–10 minutes or until tender–crisp; drain.

Combine beer and flour in bowl; mix well. Dip cauliflower in batter. Deep-fry in 375° oil until golden brown; drain. Serve Cheese Sauce with cauliflower.

Cheese Sauce:
Melt butter in heavy skillet. Add flour, stirring until smooth. Cook for 1 minute, stirring constantly. Add milk gradually. Cook over medium heat until thickened, stirring constantly. Remove from heat. Add cheese, stirring until melted.
