Meatball and Mini Stars Soup

Ingredients

1 (32-ounce) bag frozen fully cooked meatballs*
2 to 3 cloves garlic, minced
1/2 cup chopped onion
1/2 cup diced celery
2 tablespoons olive oil
6 cups chicken broth
1 1/2 cups crushed tomatoes
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup dry mini star pasta

Directions:

In a frying pan, cook meatballs over medium-low heat 8–10 minutes. Set aside.

In a large stockpot, saute garlic, onion, and celery in oil until onion is transparent. Add meatballs, chicken broth, tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer and add star pasta. Simmer an additional 2–4 minutes, or until pasta is done.

*Can be found in the frozen meat section. Your favorite meatball recipe may be substituted.
