Whipped Cream

1 cup cream, heavy
3 tablespoons sugar, confectioner's
1/2 teaspoon vanilla extract


1. Place the cream in a chilled large bowl and beat it with an electric mixer, first on slow speed, then medium speed, then high, until soft peaks form, about 5 minutes.

2. Add the sugar and vanilla and continue beating until the cream is thick and stiff, about 2 minutes more. Do not overbeat or the cream will separate.

Makes about 1 1/2 cups
