Coconut Ice Cream

GUADELOUPE
Special Equipment: Ice Cream Machine

This lovely ice cream comes from Guadeloupe’s Point Château Beach, where it’s churned by hand by women working under beach umbrellas or from the backs of their station wagons. For the best results, use made-from-scratch coconut milk. In a pinch you can use canned (try Goya or A Taste of Thai); do not use coconut cream.


   _ c coconut milk (homemade or canned)
   ___ c sugar, or more to taste
   1 tsp vanilla extract
   ___ tsp almond extract
   _ tsp lemon zest, grated
   ___ tsp cinnamon, groun
   ___ tsp nutmeg, freshly grated


1. Combine all the ingredients in a medium-size bowl, including 2/3 cup sugar, and whisk until the sugar is dissolved. Correct the seasoning, adding sugar if necessary.

2. Transfer the mixture to an ice cream machine and freeze, following the manufacturer’s instructions.

Serves 4
