Three Hots Salad


Serves: 4

Ingredients

2 teaspoons wasabi, , or to taste
2 teaspoons water
3 tablespoons rice vinegar
1 1/2 tablespoons sugar
2 teaspoons soy sauce
1/2 teaspoon salt
1/2 teaspoon black pepper, freshly ground
1 bunch watercress, rinsed, spun dry, and torn into small springs
1 bunch mustard greens, stemmed, rinsed, spun dry, and torn into bite-size pieces (2 to 3 cups) or the equivalent in additional watercress

Directions:

1. Combine the wasabi and water in the bottom of a serving bowl and whisk to make a paste. Let stand 5 minutes.

2. Add the vinegar, sugar, soy sauce, salt, and pepper to the wasabi mixture, and whisk until the sugar and salt are dissolved.

3. Just before serving, add the watercress and mustard greens and toss to mix.
