Spicy Japanese Bean Sprout Salad

JAPAN

A meal at a yakitori parlor would include several small dishes of salads as well as grilled fare on a skewer. This one comes from Ton Ton, a bare bones yakitori joint under the elevated railroad near the Ginza district in Tokyo. The dressing contains only six ingredients, but the flavors-sweet, salty, sour, nutty, and fiery-will play pinball with your taste buds.


   _ clove garlic
   ___ tsp salt, or more to taste
   _ tbs sugar, or more to taste
   _ tbs rice vinegar, or more to taste
   _ tsp sesame oil, Asian (dark)
   ___ to 1 tsp red pepper flakes, to taste
   _ c bean sprouts, mung (about 8 ounces)


1. Mash the garlic with 3/4 teaspoon salt in a small bowl. Add 1 tablespoon sugar, 3 tablespoons vinegar, the sesame oil, and hot pepper flakes and whisk until the sugar and salt are dissolved. Stir in the bean sprouts and let stand for 5 minutes.

2. Just before serving, taste for seasoning, adding salt, sugar, or vinegar as necessary; the salad should be highly seasoned.

Serves 4 to 6
