Sesame Spinach

Ingredients

1 pound spinach, fresh, stemmed and rinsed thoroughly
salt, to taste
2 tablespoons sesame seeds, toasted
1 clove garlic, minced
2 tablespoons mirin (sweet rice wine) or cream sherry, or more to taste
1 tablespoon soy sauce, or more to taste
1 tablespoon sesame oil, Asian (dark)

Directions:

1. Cook the spinach in a large saucepan of boiling salted water until just tender, about 30 seconds. Drain the spinach in a colander and rinse with ice water. Blot the spinach leaves dry with paper towels.

2. Combine half the sesame seeds, the garlic, 2 tablespoons mirin, 1 tablespoon soy sauce, and the sesame oil in a serving bowl and whisk to mix. Stir in the spinach. Correct the seasoning, adding soy sauce or mirin as necessary the salad should be a little sweet and a little salty. Sprinkle the spinach with the remaining sesame seeds and serve at room temperature or chilled.
