STEP 16. When the loaves have been shaped, it is time for the second rising. Cover the pans with plastic wrap or a clean towel and return them to a warm spot to rise again. This second rising usually takes only about half as long the first. Once the loaves have risen, it’s time to bake them. Unless otherwise specified, preheat the oven as directed, which, for this recipe is 400°F.
