Cranberry Nut Bread

Ingredients

1 egg
3/4 cup orange juice
1/4 cup vegetable oil
1 cup sugar
2 cups coarsely chopped fresh or frozen cranberries
1 tablespoon grated orange peel
2 cups whole wheat flour
1/2 cup chopped walnuts
1 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda

Directions:

1. Preheat the oven to 350°F. Butter two 8-x-4-inch bread pans and set aside.

2. Place the egg, orange juice, oil, sugar, cranberries, and orange peel in a large mixing bowl and stir with a wooden spoon. Add the flour, walnuts, salt, baking powder, and baking soda, and stir (do not beat) just until the ingredients are mixed—do not overstir.

3. Divide the batter into the prepared pans and bake for about 1 hour, or until a toothpick inserted into the center of a loaf comes out clean. Cool on a wire rack for 30 minutes, then turn the loaves out of the pans. Finish cooling the bread on the rack before serving.
