White Sandwich Bread

Ingredients

3 cups GF Flour Mix
1/4 cup sugar
3 1/2 teaspoons xanthan gum
1 1/2 teaspoons salt
1 1/2 tablespoons yeast
1 3/4 cups warm water
1/4 cup oil
1 teaspoon rice vinegar
3 eggs

Directions:

Mix flour mix, sugar, xanthan gum, and salt together in the bowl of a stand mixture. Dump the yeast on top of the dry ingredients, but don't mix it in. Combine water, oil, and vinegar in a separate bowl. Pour on top of yeast, and let sit 3 minutes. Mix together on low speed. Add eggs. Mix until combined, then beat on high speed for 5 minutes.

Grease 2 regular loaf pans (8 x 4 x 2-inch) or 12 English muffin rings**. Spoon bread batter into pans, and let rise for about 20 minutes. As your bread is rising, preheat your oven to 375°F.

Bake loaf pans for about 35 minutes. Bake English muffin rings**, rolls, and small loaves for 20 to 25 minutes. The bread will be a deep brown color when it is done. Remove it from the oven and let it cool.

Slice it and place it in zip-lock bags in the fridge or freezer. When ready to use, place the desired number of slices on a plate and microwave on high for 20 to 30 seconds. It will taste as if you just pulled it out of the oven.

**English muffin rings can be bought at most kitchen stores, If you don't have muffin rings, fold 7 x 12-inch sheets of aluminum foil in half and then in thirds lengthwise, forming 6 layers in all. Bend into circles and secure with tape.
