Garlic Roasted Potatoes

Ingredients

2 1/2 pounds potatoes (new, sweet, or combination of both)
12 cloves garlic cut into halves
2 tablespoons olive oil
1 teaspoon sea salt
1 large Vidalia onion cut into thick slices (optional)
1 heaping tablespoon curry powder or 2 tablespoons minced fresh rosemary

Directions:

1. Scrub the potatoes and cut them into bite-size chunks. If you use a combination of new and sweet potatoes, cut the sweet potatoes into slightly larger chunks because they cook a little faster.

2. Place the potato chunks in a large bowl along with the garlic, oil, and salt. Add the onion, if desired, and either the curry powder or the rosemary. Mix well.

3. Turn the mixture onto a large cookie sheet and spread into an even layer. Bake in a preheated 350°F oven for 50 minutes, or until the potatoes are tender and browned. Serve immediately.
