Frozen Pumpkin Pie

1 (15-ounce) can pumpkin
1 cup brown sugar
1 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon nutmeg
2 quarts vanilla ice cream
2 (9-inch) graham cracker pie crust
1/4 cup , chopped pecans, , toasted


Combine pumpkin, sugar, salt, and spices mix well. Stir ice cream to soften quickly fold in pumpkin mixture. Spoon into crusts top with pecans. Freeze until firm cover, label, and return to freezer.

When ready to serve, remove from freezer about 10 minutes before serving. Top with whipped cream as desired.
