Marble Squares with Fudge Sauce

Serves: 9

   3/4 cup sugar
   1/2 cup butter or margarine
   1 1/2 teaspoons vanilla extract
   2 eggs
   2/3 cup flour
   1/2 teaspoon baking powder
   1/4 teaspoon salt
   1 (1 ounce) square unsweetened baking chocolate, melted
   Vanilla ice cream
   Fudge Sauce:
   3/4 cup sugar
   3 tablespoons baking cocoa
   Dash salt
   2 tablespoons water
   1 (5-ounce) can evaporated milk
   2 tablespoons butter or margarine
   1 teaspoon vanilla extract

Cream sugar with butter; add vanilla. Add eggs, beating just until blended. Stir together flour, baking powder, and salt. Stir into creamed mixture. Spoon half of the batter into another bowl; stir melted chocolate into remaining batter.

Drop chocolate batter, checkerboard-fashion, from a tablespoon into a greased 8 x 8 x 2-inch pan. Fill in the spaces with the light batter. Zigzag batter with spatula to marble, but don't over mix. Bake at 350° F until done, 25-30 minutes; cool. Wrap, label, and freeze.

To serve, thaw cake. Cut into squares. Top each square with a scoop of vanilla ice cream. Drizzle with hot or cold Fudge Sauce.

Fudge Sauce:
In a saucepan, combine sugar, cocoa, and salt. Blend in water, stirring to dissolve cocoa. Add milk; bring to a boil. Boil gently until thick, about 3-4 minutes, stirring often. Remove from heat; add butter and vanilla. Cover and chill. If desired, heat before serving for hot fudge sauce. Makes 1 cup.
