Fran's Potato Cheese Corn Chowder

Ingredients

2 tablespoons butter or margarine
1 onion, minced
3/4 cup diced celery
1 pound sausage, sliced
1 pound potato, grated
4 pounds potatoes, diced
1 cup carrot diced
3 (15 1/4-ounce) cans cream style corn
2 (15 1/4-ounce) cans whole kernal corn *
1 quart chicken stock
1 (10 3/4-ounce) can cream of mushroom soup
1 teaspoon black pepper
1 tablespoon seasoned salt
2 teaspoons basil
1 cup dry milk powder not mixed up
2 pounds grated cheese

Directions:

In a large skillet, melt butter over medium heat. Saute onion and celery until softened but not brown. Add sausages to lightly brown, then pour into crockpit. Add all remaining ingredients to crockpot, except the milk powder and cheese. Cook on HIGH 10 hours. Add the milk powder and grated cheese the last 30 minutes. If the chowder is too thin, you can remove some of it and put through the blender to thicken, if it is too thick, add water. Adjust seasonings if desired. Serve with bread or crackers.

*NOTE: may substitute a 16 oz package of frozen corn for the canned corn.
