Peel and cut cucumbers into slices; salt and pepper to taste. In a food processor or blender, process all remaining ingredients except crackers and red peppers until finely mixed. Spoon a small amount of mixture onto each cracker; add a cucumber slice, then add a dollop of mixture on top. Place on a serving platter, garnish with minced red pepper, and refrigerate until ready to serve.
Editor's Extra: This sauce is delicious as a dip with crackers. Or dip the cucumber slices in it!
Fun Fact: Cutting a corner tip off a zipper bag works well for piping soft fillings onto canapés. It’s handy for decorating a plate with a sauce, too, and also for decorating with frosting.
