Pecan Pie Minis

Ingredients

2 packages frozen mini fillo shells
1 1/4 cups chopped pecans
2 eggs, beaten
2/3 cup dark brown sugar
2/3 cup corn syrup
3 tablespoons butter, melted
1/2 teaspoon vanilla
dash of salt

Directions:

Place fillo shells into mini muffin pans. Divide pecans into each shell. Stir remaining ingredients together and spoon over pecans to 2/3 full. Bake 20–25 minutes at 350° till browned.

Editor's Extra:
If you can't find fillo (phyllo) shells, you can use regular pie dough. Roll dough thinly. Cut small circles with floured biscuit cutter or glass. Press down into mini muffin pans and flare edges.
