Tomato & Basil Bisque

2 onions, chopped
2 carrots, peeled and shredded
1 tablespoon butter
8 tomatoes, peeled and chopped
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup fresh basil, chopped
2 cups chicken broth


In a large saucepan over medium heat, sauté onions and carrots in butter until tender. Stir in tomatoes, sugar, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Cool soup slightly; transfer to a blender. Add basil; cover and process until smooth. Pour soup back into saucepan. Stir in broth; heat through.
