North Woods Bean Soup

Ingredients

1/2 pound turkey kielbasa, halved lengthwise and sliced 1/2-inch thick
1 cup baby carrots, chopped
1 cup onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
2 (15.8-ounce) cans great northern beans, drained and rinsed
1 (6-ounce) package baby spinach

Directions:

Spray a large stockpot with non-stick vegetable spray; heat over medium-high heat. Add Kielbasa, carrots, onion and garlic; sauté for 3 minutes, stirring occasionally. Reduce heat to medium; cook for 5 minutes. Add broth, seasonings and beans. Bring to a boil; reduce heat and simmer for 5 minutes. Place 2 cups of soup in a blender or food processor. Process until smooth; return processed soup to pan. Simmer for an additional 5 minutes; remove from heat. Add spinach, stirring until it wilts.
