Potato Patch Soup

Serves: 6

7 potatoes, peeled and diced
1 carrot, peeled and finely chopped
2 tablespoons dried, minced onions
3 cups water
4 cubes chicken bouillon
1 tablespoon dried parsley
1 teaspoon celery seed
4 slices pasteurized process cheese spread
1 1/2 cups milk


Combine potatoes, carrot, onion, water, bouillon cubes, parsley and celery seed in a large saucepan. Simmer over medium heat until potatoes are tender, 25 to 30 minutes. Remove from heat. Add cheese slices; let stand until melted. Stir in milk and serve.
