Mushroom-Barley Soup

1/2 pound stew beef, cubed
1 onion, chopped
1 (8-ounce) package sliced mushrooms
1 tablespoon olive oil
4 (14 1/2-ounce) cans beef broth
3/4 cup instant barley, uncooked


Combine beef, onion, mushrooms and oil in a large saucepan. Cook over medium-high heat for about 10 minutes, until beef is browned. Stir in broth; bring to a boil. Add barley. Reduce heat and simmer, covered, for 30 to 45 minutes, until beef and barley are tender.
