Chunky Minestrone

1 tablespoon olive oil
1 1/2 cups onions, chopped
1 carrot, peeled and sliced
2 cloves garlic, minced
1 (14 1/2-ounce) can diced tomato
4 cups chicken broth
1 cup water
1 teaspoon Italian seasoning
1/2 cup long-cooking rice or soup pasta, uncooked
1 (15-ounce) can kidney beans, drained and rinsed
1 zucchini, chopped
1/2 teaspoon pepper
grated Parmesan cheese


In a Dutch oven, heat oil over medium heat. Add onion, carrot and garlic; cook for 3 minutes, or until tender. Stir in tomatoes with juice, broth, water, seasoning and uncooked rice or pasta. Bring to a boil. Reduce heat and simmer, uncovered, for 20 minutes or until rice or pasta is tender. Stir in beans, zucchini and pepper; simmer for 5 minutes. Sprinkle with cheese before serving.
