Break cauliflower up into florets. Put in 2-quart round casserole dish. Add 2 tablespoons water. Cover. Microwave on HIGH 6 – 8 minutes or until almost tender. Let stand. Drain.
Mix sour cream, mayonnaise, and mustard. Toss gently with cauliflower. Sprinkle with cheese. Microwave on MEDIUM (50%) 2 – 4 minutes. Serve.
Note: Cauliflower can be cooked whole. Add 1 or 2 tablespoons water and microwave, covered, on HIGH 8–10 minutes. Let stand. The above mixture can be spread over the whole cauliflower.
