Gourmet Potatoes

Ingredients

2 cups shredded Cheddar cheese
1/2 cup plus 2 tablespoons butter, divided
1 1/2 cups sour cream (at room temperature)
1/2 cup chopped green onions
1 teaspoon salt
1/2 teaspoon pepper
8 medium potatoes, peeled, coarsely shredded

Directions:

Heat cheese and 1/2 cup butter in saucepan over low heat until partially melted, stirring occasionally; remove from heat. Stir in sour cream, green onions, salt, and pepper. Fold in potatoes. Spoon into greased 8-inch glass baking dish. Dot with 2 tablespoons butter. Bake at 350° for 25 minutes or microwave, covered, on HIGH for 12 minutes.
