Orange Glazed Carrots

Serves: 4
Total Calories: 84


5 carrots - medium
1/4 teaspoon salt
1/2 cup orange juice
2 teaspoons cornstarch
1 tablespoon butter or margarine


Peel and slice carrots into 1/4 inch slices. Cook in water until tender, 18-20 minutes. Drain water and add salt, orange juice, cornstarch, and butter. Cook and stir until boils for 1 minute while sauce thickens.

Note: Cook 2 extra carrots and use them for the minestrone soup.
