Cukes and Tomatoes

2 tablespoons olive oil or vegetable oil
1 tablespoon cider vinegar
1 tablespoon parsley minced, fresh
1/4 teaspoon salt
1/4 teaspoon black pepper
3 tomatoes sliced, medium size
1/2 cucumber - large, sliced


In a small bowl, whish oil, vinegar, parsley, salt and pepper. On a serving plate, arrange tomatoes and cucumber slices over lettus if desired. Drizzle with vinaigrette.
